Coconut biscuits
Biscuits with coconut and glaced cherries
Ingredients
- 250 g Butter
- 250 g Sugar
- 250 g Coconut
- 2 Eggs
- 350 g Cake flour
- 50 g Red glaced cherries
- 5 g Baking powder
Method
- Cream Butter and sugar well.
- Add the coconut.
- Add the cake flour and the baking powder.
- Cut and add the cherries.
- Add the eggs and mix to a soft dough. Don't over mix.
- Press small amounts of dough on a floured surface to about 4 mm thick and cut with cookie cutter as desired.
- Bake till light brown at 175oc for 20 – 25 minutes.
