Ingredients
- 1 Onion
- 1 Cup Red lentils
- 2 tsp Tomato paste
- 1 tin Coconut milk ( 400 ml)
- Crushed red chilli (to taste)
- Salt (to taste)
- 36 Basio Tomatoes or cherry tomatoes
- 30 g Rocket
Method
- Fry the chopped onion until light brown.
- Add the lentil and 4 cups of water.
- Cover pot and cook until lentils are soft about 15 minutes.
- Using a stick blender make lentils fine.
- Add tomato paste, coconut milk and 1 cup of water and bring to boil.
- Add chilly and salt to taste and remove from heat.
- Cut tomatoes in halve and fry in heavy sauce pan in a bit of olive oil.
- Fry tomatoes cut side on pan until brown and remove from heat.
- Chop rocket fine and add to soup just before serving but don't cook again.
- Dish in bowl and serve hot.
Place 6 halves of roasted tomatoes in each serving of soup before serving.
Make 6 Portions.
