Ingredients
- 1 Onion
- 1 Aubergine
- 1 Red sweet pepper
- 8 Pettipans
- 4 Baby marrows
- 1 Tin chopped Italian tomatoes (400 g)
- ¼ Teaspoon black pepper corns
- ¼ Teaspoon coriander seeds
- 2 Bay leafs
- 2 Teaspoons BBQ spice
- ¼ Teaspoon cumin
- Pinch of Salt
Method
- Cook pasta of your choice to directions on packet.
- Fry the chopped onion with bay leafs. pepper corns and coriander seeds.
- Add the spices and fry until it change color.
- Add the Italian tomatoes and one cup of water.
- Cut the vegetables in chunks and add to pot.
- Cover with lid and cook vegetables soft to your desire.
- The sauce should be thick and not much if sauce is a lot reduce by cooking the sauce.
- Mix pasta with the veg and sauce.
Vegetables enough for 4 people add pasta for 4 people.
