Pasta with mushrooms

Pasta with mushrooms and tomato

Ingredients

  •  250 g Pasta
  •  2 Red bell peppers
  • 1 Onion
  •  1 tin Italian chopped tomatoes (425 g)
  • 250 g Button mushrooms
  •  20 g Basil
  • Ground Black pepper (to taste)
  • 2 tsp Cumin
  • Salt (to taste)

Method

Cook Pasta of your choice according to instructions on packet.

  •  Chop onion and fry in olive oil.
  • After 2 minuter add cut red peppers.
  •  Add the Cumin and fry until cumin change color.
  •  Add the tomato with juice.
  •  Add 1 cup water and simmer 5 minutes.
  •  Add the sliced mushrooms and simmer another 5 minutes.
  •  Mix with cooked pasta of your choice.
  •  Roughly chop fresh Basil and mix in just before serving

Serve hot

Serve 6 portions
