Ingredients
- 250 g Pasta
- 2 Red bell peppers
- 1 Onion
- 1 tin Italian chopped tomatoes (425 g)
- 250 g Button mushrooms
- 20 g Basil
- Ground Black pepper (to taste)
- 2 tsp Cumin
- Salt (to taste)
Method
Cook Pasta of your choice according to instructions on packet.
- Chop onion and fry in olive oil.
- After 2 minuter add cut red peppers.
- Add the Cumin and fry until cumin change color.
- Add the tomato with juice.
- Add 1 cup water and simmer 5 minutes.
- Add the sliced mushrooms and simmer another 5 minutes.
- Mix with cooked pasta of your choice.
- Roughly chop fresh Basil and mix in just before serving
Serve hot
