Roasted filled Peppers

Roasted sweet pepper filled with broccoli and cottage cheese

Ingredients

  •  4 Sweet peppers
  •  250 g Chunky cottage cheese
  •  1 Clove garlic
  •  6 ml Grainy mustard
  •  1 large broccoli
  •  Black pepper (to taste)
  • Pinch of Salt

Method

  •  Preheat oven to 200ºc.
  •  Cut peppers in halve and roast until start to turn brown at edges.
  •  Roast at 200ºc for about 30 minutes.
  •  Meanwhile blanch the broccoli and grate when cooled. 
  •  In a bowl combine cottage cheese, chopped garlic, mustard, salt and pepper.
  •  Add cooled grated Broccoli to cheese mix.
  •  Fill roasted peppers with Broccoli and cheese mix.
  •  Roast for 10 minutes under grill before serving.

 Serve hot.

 Serve 6 portions
