Roasted filled Peppers
Roasted sweet pepper filled with broccoli and cottage cheese
Ingredients
- 4 Sweet peppers
- 250 g Chunky cottage cheese
- 1 Clove garlic
- 6 ml Grainy mustard
- 1 large broccoli
- Black pepper (to taste)
- Pinch of Salt
Method
- Preheat oven to 200ºc.
- Cut peppers in halve and roast until start to turn brown at edges.
- Roast at 200ºc for about 30 minutes.
- Meanwhile blanch the broccoli and grate when cooled.
- In a bowl combine cottage cheese, chopped garlic, mustard, salt and pepper.
- Add cooled grated Broccoli to cheese mix.
- Fill roasted peppers with Broccoli and cheese mix.
- Roast for 10 minutes under grill before serving.
Serve hot.
