Ingredients
- 1 Red bell pepper
- 1 Red onion
- 1 Cup Flour
- 4 Baby marrows
- 5 Button mushrooms
- Salt
- Crushed dried red chilly
- 1 Butternut
Method
- Cut all vegetables roughly except the Butternut.
- Cut butternut in halve and pre boil with water until just soft.
- Sprinkle vegetables with Olive oil.
- Season with Salt and crushed read chilly to taste.
- Bake at 200ºc in pre heated oven.
- Bake until soft ± 30 minutes.
- Scoop roasted vegetables into butternut.
- Roast another 15 minutes.
This will ensure butternut to be taste and not bland.
Serve hot as Vegetables or with roasted potato wedges on the side.
Serve 2 large portions.
