Ingredients
- 180 g fresh dates
- 130 ml Luke warm Water
- 62 g Butter
- 135 g Brown Sugar
- 15 g Instant coffee
- 4 Eggs
- 100 g Cake Flour
- 3 g Bicarbonate of soda
- 30 g Digestive bran
Method
- Cut dates in pieces and remove pits.
- Add the water and set aside to stand.
- Pre heat oven to 180ºc.
- Put butter, Sugar, Coffee, Cake flour, Bicarbonate of soda and Digestive bran in bowl and rub in the butter.
- Add the beaten eggs.
- Add the dates and water.
- Mix all ingredient well together.
- Pour into 12 x 18 cm greased and dusted loaf pan.
- Bake at 180oc for 75 minutes minutes
- Remove from pan while hot.
- Serve hot with custard as a desert or serve as a tea cake when cold.
Makes 1 loaf.
