Rice surprise
Rice surprise with a centre of melted cheese
Ingredients
- 1 Cup Arborio rice
- 1 Tin chopped Italian tomatoes 400 G
- 1 Onion
- 1 Yellow Bell pepper
- 1 Red Bell pepper
- ½ Green Bell pepper
- 3 Cloves
- 3 Tsp BBQ spice
- 2 Tsp Paprika
- 1 Tsp ground Bayleafs
- 1 Tsp ground Coriander seeds
- Salt to taste
- 1/3 Cup pea flour
- 2 Eggs
- 12 Piece mozzarella cheese (1 x 1 cm x 2.5cm long)
Method
- Chop the Onion and pepper into 5mm cubes.
- Fry the chopped onion and peppers with a little Olive oil.
- Add the Bayleafs and Corriander ,fry until onion is just soft.
- Add the BBQ spice and paprika. Immediately add the tomato and ½ a cup of water.
- Add the rice and cook on medium heat.
- Stir slowly until rice is cooked about 15 min.
- Set aside and allow to cool.
- If rice is cold add pea flour and stir.
- Wet your hands and form balls around a piece of cheese.
- Roll in spiced flour. Then dip in egg . Then roll in crumbs. Deep fry until golden brown on medium heat.
- Serve warm.
