Rice surprise

Rice surprise with a centre of melted cheese

Ingredients

  • 1 Cup Arborio rice
  • 1 Tin chopped Italian tomatoes 400 G 
  • 1 Onion
  • 1 Yellow Bell pepper
  • 1 Red Bell pepper
  • ½ Green Bell pepper
  • 3 Cloves
  • 3 Tsp BBQ spice
  • 2 Tsp Paprika
  • 1 Tsp ground Bayleafs
  • 1 Tsp ground Coriander seeds
  • Salt to taste
  • 1/3 Cup pea flour
  • 2 Eggs
  • 12 Piece mozzarella cheese (1 x 1 cm x 2.5cm long)

Method

  • Chop the Onion and pepper into 5mm cubes.
  • Fry the chopped onion and peppers with a little Olive oil.
  • Add the Bayleafs and Corriander ,fry until onion is just soft.
  • Add the BBQ spice and paprika. Immediately add the tomato and ½ a cup of water.
  • Add the rice and cook on medium heat.
  • Stir slowly until rice is cooked about 15 min.
  • Set aside and allow to cool.
  • If rice is cold add pea flour and stir.
  • Wet your hands and form balls around a piece of cheese.
  • Roll in spiced flour. Then dip in egg . Then roll in crumbs. Deep fry until golden brown on medium heat.
  • Serve warm.
