Ingredients
- 1 Cup Brown lentils
- 1 Onion
- 35 ml Tomato paste
- 3 teaspoons BBQ spice
- 1 teaspoon mild yellow curry
- 30 ml corn flour
- Pinch of Salt
- 400 g garden peas
Method
- Cook the lentils until soft and set aside.
- Fry the chopped onion until onion start to turn brown.
- Add the spice and fry until spices change color.
- Add one cup of water and tomato paste and cook for 10 minutes.
- Mix the corn flour with a bit of cold water.
- Thicken the sauce with the corn flour.
- Add the peas and lentils and simmer for 2 minutes.
- Pour into 25 x 25 x 5 cm oven poof dish.
- Spread mashed potatoes on top.
- Bake till light brown at 200oc.
Potatoes need to be 1/3 and lentils 2/3 i use 4 potatoes see recipe for mashed potatoes
