Curry Sump (Stampmielies)

Curry sump (Stampmielies) with potato and carrots

Ingredients

  •  1 Cup Stampmielies (samp & beans)
  •  1 Onion
  •  ½ Green bell pepper
  •  3 Carrots
  •  2 Potatoes
  • 2 Bayleafs
  •  ½ Teaspoon black peppercorns
  •  4 Teaspoons mild yellow curry
  •  ½ Teaspoon leaf masala
  •  30 Ml Tomato paste
  •  2 Table spoons vinegar
  • Pinch of Salt

Method

  • Soak the samp overnight
  • Boil slowly for 2 hours stirring as little as possible   
  •  Fry chopped onion, green pepper, bayleafs and peppercorns together.
  •  Add the spice and carrots
  •  Add the vinegar and immediately 2 cups water
  •  Boil for 5 min and add boiled samp and water
  •  Add the cut up potato and boil slowly until soft 
  •  Add tomato paste and boil slowly for 10 min
