Vegetarian Waterblommetjies

Ingredients

  • 500g Waterblommetjies
  • 4 Potatoes (cut in chunks)
  • 1 Onion 
  • 3 Tbsp Pea flour
  • 2 Tsp BBQ Spice
  • 1 Tsp Mild yellow curry
  • ½ Tsp Garum masala
  • ¼ Tsp coarsely Ground black pepper
  • 2 Whole cloves
  • 2 Bay leafs
  • ½ Tsp coriander seeds
  • ¼ Tsp Crushed dried red chilly
  • 3 Springs of fresh Thyme or 1 Tsp dried Thyme 
  • Salt to taste

Method

  • Peel and chop the Onion add the Black pepper, Cloves, Bay leafs, Coriander seeds and Dried red chilly and fry in a little oil.
  • Fry until just cooked but not brown.
  • Add the spices and pea flour and fry until spice change color.
  • Add 3 cups of water and potatoes.
  • Stir To form a sauce and allow to simmer until potato is soft.
  • Add 3 Springs of fresh thyme to potatoes and sauce.
  • Add the waterblommetjies and simmer until soft (covered).
  • Take care not to cook the waterblommetjies to soft as they will get soft very quickly.
  • Serve on a bed of white rice.
  • Serve 6 portions.
