Waterblommetjies
Vegetarian Waterblommetjies
Ingredients
- 500g Waterblommetjies
- 4 Potatoes (cut in chunks)
- 1 Onion
- 3 Tbsp Pea flour
- 2 Tsp BBQ Spice
- 1 Tsp Mild yellow curry
- ½ Tsp Garum masala
- ¼ Tsp coarsely Ground black pepper
- 2 Whole cloves
- 2 Bay leafs
- ½ Tsp coriander seeds
- ¼ Tsp Crushed dried red chilly
- 3 Springs of fresh Thyme or 1 Tsp dried Thyme
- Salt to taste
Method
- Peel and chop the Onion add the Black pepper, Cloves, Bay leafs, Coriander seeds and Dried red chilly and fry in a little oil.
- Fry until just cooked but not brown.
- Add the spices and pea flour and fry until spice change color.
- Add 3 cups of water and potatoes.
- Stir To form a sauce and allow to simmer until potato is soft.
- Add 3 Springs of fresh thyme to potatoes and sauce.
- Add the waterblommetjies and simmer until soft (covered).
- Take care not to cook the waterblommetjies to soft as they will get soft very quickly.
- Serve on a bed of white rice.
- Serve 6 portions.
