Curry Sump (Stampmielies)
Curry sump (Stampmielies) with potato and carrots
Ingredients
- 1 Cup Stampmielies (samp & beans)
- 1 Onion
- ½ Green bell pepper
- 3 Carrots
- 2 Potatoes
- 2 Bayleafs
- ½ Teaspoon black peppercorns
- 4 Teaspoons mild yellow curry
- ½ Teaspoon leaf masala
- 30 Ml Tomato paste
- 2 Table spoons vinegar
- Pinch of Salt
Method
- Soak the samp overnight
- Boil slowly for 2 hours stirring as little as possible
- Fry chopped onion, green pepper, bayleafs and peppercorns together.
- Add the spice and carrots
- Add the vinegar and immediately 2 cups water
- Boil for 5 min and add boiled samp and water
- Add the cut up potato and boil slowly until soft
- Add tomato paste and boil slowly for 10 min
